White Chocolate Dipped Strawberries Topped W/Pistachios

When I think about February, a few things come to mind - my birthday, love, roses, and sweet treats. One treat in particular, and I'm sure a fan favorite, is chocolate-covered strawberries. These are a traditional and popular gift for Valentine's Day, and it's no surprise because they are so delicious.

Nothing tastes better than a white chocolate dipped strawberry topped with pistachio crumbs. The pistachios' saltiness, paired with the rich and elegant flavor of the white chocolate, makes for the ultimate palate. The crunch, taste, and bliss will leave anyone wanting more.

So here it is, this quick and simple recipe.

WHITE CHOCOLATE DIPPED STRAWBERRIES TOPPED W/PISTACHIOS

  • 12 - 15 large ripe strawberries

  • 11 oz white Ghirardelli Classic White Baking Chips

  • 1/2 tsp. Vegetable oil

  • Pistachios, finely ground

MATERIALS

Parchment paper

DIRECTIONS

  • Crush your pistachios using a rolling pin or similar object to crush them. I like to use a molcajete for this. Once they are crushed, put them in a small bowl and set aside.

  • On a double broiler, bring two cups of water to a boil—place bowl with the white chocolate chips on top of the pot. Add a little bit of vegetable oil and stir until chocolate has melted and has a smooth texture.

  • Dip strawberries into melted chocolate and then immediately roll in the ground pistachios (you could also sprinkle them on top for a lighter coat).

  • Lay on a baking sheet to set.

A few tips to follow before starting the process:

  1. Make sure the strawberries and washed and fully dry. I like to give them a quick wipe and set them on a towel for 30 minutes to dry completely.

  2. For the ultimate flavor, make these strawberries the day you will enjoy them. You don't have to put them in the refrigerator because the strawberries will naturally start to release their natural juices once you remove them.

  3. I found that melting these particular chips on a double broiler worked best than in the microwave. They melted so smoothly.
